As melancholy as it may be, we love autumn. It will be because little by little comes the time to pick up the first specimens of our Tuber melanosporum, or because we are in full season of Tuber uncinatum, less known but very tasty and aromatic.
This truffle, also called autumn truffle or Bourgogne truffle, is collected from early autumn until late December or early January. Although its consumption and marketing in Spain is not as widespread as the black truffle, we love its gastronomic possibilities and that is why we have decided to include it among our products.
