Around the month of November the first truffles start to mature in our area and, at TrufaZero, we start gathering; the season will end around March. The “burnt” look of the land gives us an idea of where we can find truffles and our great trained dogs smell the matured specimens; it’s time to carefully pull them out and take them to our modern facilities where they are thoroughly cleaned, meticulously sanitized and selected by size.
In our cannery we prepare and can the truffles in order to lengthen the shelf life of this gastronomic gem and supply the market in the best sanitary conditions.
At TrufaZero, we meet all quality controls so that all our black truffles are freshly harvested Tuber Melanosporum which are cleaned, selected, and packaged with the most modern preservation techniques and sanitary registration.
